A long time ago we used to share how we celebrated and any special recipes. That was fun!

It was fun....it wasn't as hard to find ingredients, people seem to be in a hurry so in their infinite wisdom the powers that be have decided to have everything prepared for us.
I was talking to a friend's niece a couple of days ago, she still makes special holiday dishes from scratch, the way her Noni taught her despite the shortcuts her friends are suggesting....quite refreshing.

We'll have to resurrect the topic.

I am cooking a fresh turkey today 'sous vide' (in a hot water bath for 10 hours), with mashed potatoes & dressing all prepared sous vide. I am using two sous vide cookers. It's an interesting technique often used in restaurants that results in the most flavorful & juicy turkey possible IMHO. I make the gravy using homemade turkey stock...which takes a day by itself...along with juices from the 3 zip lock bags that the turkey cooks in. You don't want to know how much butter & cream fraiche is in the potatoes.
Yumm.
